Shredded Chicken over Cracker with red pepper paste and chinese chive..

At the beginning of the week I boiled some chicken with rosemary, thyme, peal onions and then shredded them. Since then, I have been finding creative ways to use my shredded chicken đŸ˜‰ Today I used them on crakers and made this. I put a dib of shrimp chili paste (the one where u have little tiny shrimps in it) on a saltine cracker, put a few pieces of shredded peppered chicken, then a big dab of red fire roasted red pepper and eggplant spread with chinese chives on top..
